Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 cup semisweet chocolate chips
  • 1 cup chopped pecans or walnuts
  • 1 cup shredded coconut

Instructions:

1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats to prevent sticking.

2. Cream the Butter and Sugars:

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This can be done with a hand mixer or stand mixer on medium speed for about 2-3 minutes.

3. Add the Eggs and Vanilla:

Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Then, mix in the vanilla extract until well combined.

4. Combine Dry Ingredients:

In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until evenly combined.
